I taught myself how to cook during college - after eating every flavor of Hot Pocket that was ever made.  I remember sliding the hot pock out of the sleeve and thinking to myself, "enough is enough."  Anyway, I was learning the basic comfort foods throughout my four years and was excited to move in with my besties after graduation so that we could all cook together and share recipes.  My honorary sister, Kari, made this soup for us while living together and I have been making it consistently ever since.  It is so easy and SO GOOD! Pork. It's what's for dinner.  Remember those pork cutlets Will Morrow described in my Hangry Hero spotlight? Well here's my version: quick, delicious and absolutely addicting.  I can see why he is so obsessed with them at the moment.  This supper was quite a highlight in my household - hangry bf ate three of the cutlets before we even sat down. Feel Good Fish Dish

Salmon is such a wonderful fish.  It can stand up to bold flavors, it's flaky, but still delicate, you can grill it or bake it or sear it -- I just love it.  I get really excited when it's on sale (the fresh stuff, not the frozen stuff), so I like to treat it with love and respect when it makes an appearance in my kitchen.  Since my trip to China, I've been under the influence of Asian flavors and this recipe was a big hit at my house.  Give it a try and let me know what you think!
