Hangry Husband and I announced last week that we are expecting our first child, our little dumpling, in October! I couldn’t wait to share the news, and I can’t wait to be a mom. I had a feeling I might be pregnant when I started experiencing extreme HANGER pains in the morning. I typically am a coffee for breakfast kind of person, but it was not an option to skip a filling breakfast during the first few weeks. One of the things I crave most is hearty toasts! I equally love buttery egg toast and avocado toast, so I starting making a hybrid of both on one toast! Here’s how I do it:

Toast Two Ways

Hangry Timer: 10 minutes
Feeds: 1

What you need:

2 Eggs
1 TBSP Butter, plus more for toast
1/2 Ripe Avocado
Cilantro
Hot Sauce
Salt
Pepper

What to do with it:

Scramble eggs in a small bowl until the whites and yellows are fully incorporated and there are no stringy bits.

Heat butter over medium heat in a small nonstick skillet. Add eggs and wait to stir until the bottom starts to cook. Stir eggs gently to form large curds and add salt and pepper. While the eggs cook, toast your bread.

Scoop avocado onto half of the bread and smash. Add salt, pepper, and cilantro.

Butter the other half of the toast. Spoon the eggs onto the buttered half. Finish toast with hot sauce and dig in!
