Crostini Craze!

The Ultimate Finger Food

I LOVE crostinis! You can literally take a bunch of random ingredients from your fridge and turn them into something snack worthy by putting them on a piece of toasted bread.  I am always creating crostinis out of leftover ingredients and I am going to share some of my favorites with you below!  Let me know what your favorite crostini toppers are by using #hangrydistrict in your posts!

Curried Butternut Squash and Whipped Ricotta Crostini

Hangry Timer: 20 minutes
Feeds: 10
Cost: $5

 

What You Need:

1  baguette
1/2  cup ricotta cheese, seasoned with salt, pepper and a drizzle of olive oil
1cup butternut squash, cut into small cubes and roasted with olive oil, curry powder, and a sprinkle of chili powder
1cilantro leaf per crostini
 

What To Do With It: 

Preheat oven to 400 degrees F.

Cut baguette on a diagonal into 1-inch thick crostinis.

Place crostinis on a baking sheet and drizzle with olive oil.

Bake for 8 minutes or until you start to smell the bread.

Sprinkle with salt as soon as the crostinis come out of the oven. Spread on the whipped ricotta, top with butternut squash and finish with one cilantro leaf.

 

Pickled Beet Crostini with Pear, Pistachio & Creme Fraiche

Hangry Timer: 20 minutes
Feeds: 10
Cost: $9

 

What You Need:

1/2cup creme fraiche
4small pickled beets, cut into matchsticks
1/4cup pistachios, chopped
1small pear, cut into matchsticks
    Salt

What To Do With It: 

Preheat oven to 400 degrees F.

Cut baguette on a diagonal into 1-inch thick crostinis.

Place crostinis on a baking sheet and drizzle with olive oil. Bake for 8 minutes or until you start to smell the bread.

Sprinkle with salt as soon as the crostinis come out of the oven.

Slather on a layer of creme fraiche.  Top with beets, pears and finish with a sprinkle of pistachios and salt.

 

Fig Crostini With Apple Butter & Gorgonzola

Hangry Timer: 20 minutes
Feeds: 10
Cost: $7

 

What You Need:

1  baguette
1/2  cup McCutcheon’s Apple Butter
1  lb. fresh figs, halved
1/2  lb. gorgonzola cheese
1  cup arugula
    Pepper

What To Do With It: 

Preheat oven to 400 degrees F.

Cut baguette on a diagonal into 1-inch thick crostinis.

Place crostinis on a baking sheet and drizzle with olive oil.

Bake for 8 minutes or until you start to smell the bread.

Sprinkle with salt as soon as the crostinis come out of the oven. Shmear on some gorgonzola, then apple butter, then arugula and finally smash on two fig halves.

Finish with a little finishing salt and devour.

 

 

You can keep the crostinis in the fridge for up to a day.  The toasts will get a bit soft, but make for a wonderful leftover snack!
